Yum Yum!

Sooo, I'm going home tomorrow to eat some home cooked food. :) Now although there is no Spanish culture in my bloodlines, my mom LOVES to cook Mexican food. So when I go home tomorrow morning, I'll come home to Green Chili Chicken Enchiladas. (one of my favorites!!!)



No puedo esperar para ir a comer y pasar tiempo con mi familia!

    I love fried eggs on my Enchiladas, that's a very New Mexican thing to do. People from other places think I'm crazy. I love your recipe link because it's not using canned soup or lowry's taco packets, it's a great authentic recipe. (Especially if you use homemade chicken broth.)Thanks for sharing! PS - Have you ever made your own tortillas?
